"If the Biblical God is omnipotent and all-loving; why did he need to sacrifice Jesus at all?"

‘Omnipotent’ means having power and authority over all things
.
Psalm 135:6 – “The LORD does whatever pleases him, in the heavens and on the earth, in the seas and all their depths.”

Isaiah 46:10-11 – “I make known the end from the beginning, from ancient times, what is still to come. I say, ‘My purpose will stand, and I will do all that I please.’ From the east I summon a bird of prey; from a far-off land, a man to fulfill my purpose. What I have said, that I will bring about; what I have planned, that I will do.”

There are no bible verses that say God is all-loving. The nearest is :-
“For God so loved the world, that he gave his only Son, that whoever believes in him should not perish but have eternal life.”

Your whinge is that God can’t be omnipotent because he had to sacrifice his son
.

The obvious answer is that God, the creator of your universe and all other universes had a reason for doing what he did in the way that he did it
and it is not going to improve your life one way or the other to know what it was
.

I suppose the underlying whinge is that you believe this is a theological error which undermines 2,000 years of religious belief
.

Why did God create you with two arms instead of twenty?
Why did God create you with the capacity for intellectual rebellion when he didn’t need to?
Why did God put you in a world where the only certainty is pain and death and where it requires personal sacrifice to rise above the shit?

Because he’s making you into something
He’s sculpting your blood-line
He’s building humanity into a worthwhile creation
that will create their own environment, travel in time, and live forever 
at a known point in the future
.

Love your enemies
bless them that curse you
do good to them that hate you

and pray for them which despitefully use you, and persecute you; 
That ye may be the children of your Father which is in heaven: 
for he maketh his sun to rise on the evil and on the good, and sends the rain on the just and on the unjust. 
For if ye love them which love you, what reward have ye? do not even the publicans the same?
And if ye salute your brethren only, what do ye more than others? do not even the publicans so? 
Be ye therefore perfect,even as your Father which is in heaven is perfect.
